Cave Des Ours resides in the mountains of Kfardebian and in the heart of Lebanon. It is 47 Kilometers away from Beirut at an altitude of 1300 meters above sea level.

Cave Des Ours is renowned for its Lebanese Apple Wine and Apple Arak. We are the first apple winery and distillery in Lebanon and the Middle East. Driven by our passion and love for sharing the exquisite taste of our products, the main focus of Cave Des Ours remains to offer the highest quality of Wine and Arak.

Our Wines Cave Des Ours produces two different types of Apple Wine, Sweet Apple Wine called “Ourson” and Dry Apple Wine called “Blanc de Pomme”. Our wine is made from the five types of apples harvested specifically for that purpose. This Wine is best served after being aged in the proper conditions. The pleasure of drinking it young will be enhanced if it is kept to breath in a carafe for some time after opening the bottle. Our wine goes perfectly with spicy dishes, white meat, fish, cheese, desserts, and dried fruits.

Our style of winemaking is centered on minimal interference.

Inspired by the wine presses surrounding his village Mtein, an environment abundant with wineries, a fertile soil of good men & blessings, on a green hill dressed in pine trees and a climate just perfect to produce the right essence, Joseph Khairallah absorbed the riches of the mountain he grew up in to become a wine-maker himself.

Vision, Strong Will, Determination, Sacrifice, Passion, Loyalty, Perseverance and Love are the main pillars upon which he created his legacy with his bare hands.

30 years of knowledge, experience and ever-growing care passed on to his son Christian who got influenced by the power of his old man’s labor.

The pulse of this winery pumped stronger when Christian met Jacky, the love of his life. Jacky with her involvement in nature and outdoor activities, more prominently hiking on the mountain trails, and her support and belief in local products and homemade businesses, a wider horizon sprung for this wine family and new boundaries emerged taking Joseph’s vision to the next level.

Nothing is impossible for those willing – a wheel that will never stop spinning and a winery that will always see life through the children of Christian and Jacky, the legacy that got carried on from one generation to another.

Château Bybline

After the civil war in Lebanon, most of the vineyards of Mount Lebanon was in catastrophic state. This vineyard at high altitudes was mostly planted with native variety "Merwah". The restoration began in the early 90’s, and in 1996 a first vinification of white wine give us an unexpected result: an exceptional aromatic bouquet and a surprising balance in the mouth.

Following this result the project began by the father, a well-experienced man in the wine field. While the first red tests were not as expected until 1998 with the use of grapes from the Bekaa Valley.

Over the years, the quality and the quantity increased and new plots of "Merwah" were planted by cuttings. Lately, the winery production reached around 10.000 bottles per year. In 2004 the son, Joseph Abi Ghanem began his studies in agronomy followed by various trainings in several Lebanese wineries before heading to Bordeaux in 2009 for his diploma in oenology.

And after completing several internships in France and Chile, the wine maker returns to his land to start the production within its own domain “Château Bybline” and as a consultant for different Lebanese wineries.

Wata Cider

Every year, tons upon tons of quality apples go to waste due to over-production, from the North of Lebanon all the way to the Chouf region. Beside apple cider vinegar and homemade jam, the Lebanese kitchen did not do much to integrate the fruit into everyday commodities. With a wealth of apples at our feet, and a passion for agricultural sustainability, we had to find a solution to an apple crisis that was threatening to transform our ecosystem and endanger the livelihood of many. We always saw Wata as that summer home we would come back to visit. But today we return to this land to pay our respects for all that it has given us over the years. WATA has become a symbol for the ability to create an exceptional product solely from nature and to live by our own rules. We’ d like to think that some of the freedom our grandfather sought for us is in each and every bottle of WATA.
